Why is acid-base balance so important?

Almost every process in your body – from enzyme activity to oxygen transport – only works within a narrow pH range. Your blood, for example, is kept constantly at a pH of 7.35 to 7.45. To achieve this, your body works around the clock: buffer systems such as bicarbonate neutralise acids, and the lungs and kidneys remove excess acid.

What does diet have to do with it?

What you eat influences how much acid your body has to deal with. Meat, sausage, cheese and grain products tend to supply acid-forming components. Vegetables and fruit, on the other hand, supply alkalising minerals such as potassium and magnesium. The typical Western diet, high in meat and low in vegetables, therefore supplies more acid than alkalising minerals.
